The Pillot domaine began in 1900 when Jean-Baptiste Pillot, a barrel maker by trade, turned to winemakinga craftsman who understood wood so deeply he knew exactly when to stop using it. Now Thierry Pillot (fourth generation) runs this 13-hectare Chassagne-Montrachet domaine with his sister Chrystelle, still guided by that fundamental philosophy: let the grapes speak, don’t crowd the room. This entry-level Burgundy Red is 100% Pinot Noir, fermented with whole bunches to preserve freshness, aged in Pillot’s signature large-format barrels (350-500 liters), using less than 10% new oak. No new oak means no vanilla maskyou taste soil, cherry, and silky tannin. It’s an aperture into how Burgundy should taste when ego steps aside.
