A cuve made primarily from fungus-resistant (PIWI) grape varieties, a blend of Bronner, Souvignier Gris, and Weissburgunder (Pinot Blanc).
The winery is Demeter-certified biodynamic and organic. Spontaneously fermented with native yeasts, undergoing malolactic fermentation, and is aged for an extended period (up to 18 months on full lees, then on fine lees) in large wooden barrels or concrete until bottling, with no filtration and minimal SO2.
